Ramen in Toshima
Ikebukuro is one of Tokyo's densest ramen districts, and the place where tsukemen's best-known pioneer, Kazuo Yamagishi, made his name.

Toshima ward is centred on Ikebukuro, one of Tokyo's great railway hubs, and the streets around its east and west exits hold one of the city's thickest concentrations of ramen shops, from rich tonkotsu-gyokai and tsukemen to niboshi, miso and Jiro-style bowls. Competition is fierce, and new shops come and go quickly.
Ikebukuro has a special place in tsukemen history. In 1961 Kazuo Yamagishi opened Higashi-Ikebukuro Taishoken, where he served morisoba, noodles with a separate hot dipping broth, a dish he had first made in the 1950s. His shop drew long queues for decades and trained many cooks, and he is widely credited with popularising tsukemen, which became a national craze in the 2000s.
