Ramen in Kyoto
Kyoto's ramen is richer than its reputation: thick chicken kotteri broth, dark old-style shoyu by the station, and a whole ramen street in Ichijoji.

For a city known for delicate cooking, Kyoto loves a heavy bowl. Its best-known contribution is kotteri ramen, a broth of chicken bones and vegetables cooked down until it's thick enough to coat a spoon, popularised by Tenka Ippin, a chain that began as a street stall in Kyoto in 1971. The city also keeps an older style: a dark, almost black shoyu broth with thin noodles and plenty of green onion (Kyoto's kujo negi), served at decades-old shops a short walk east of Kyoto Station, where two famous neighbours have drawn queues for generations.
In the north-east, the Ichijoji area near the universities became known as a ramen street, with many shops along one stretch of road competing for students.
