Soba in Kyoto
Kyoto's soba speciality is nishin soba: buckwheat noodles in hot broth under a sweet, soft-simmered fillet of dried herring.

Kyoto is an inland city, and its classic soba topping comes from preserved fish carried from the coast. Nishin soba tops hot soba with a fillet of migaki nishin, dried herring, soaked and simmered for a long time in soy, sugar and mirin until it's tender and sweet. The rich fish seasons the light Kyoto broth as you eat. The dish is usually credited to Matsuba, a soba house by the Minamiza theatre in Gion that dates to the 1860s and is said to have first served it in the 1880s.
Beyond nishin soba, Kyoto's soba houses follow the city's gentle style: pale dashi, careful knife work, and cold soba in the warm months. Many are near temples and shrines, and some are in old townhouses. On New Year's Eve, queues form for toshikoshi soba, the year-end bowl eaten across Japan.
