Udon in Kyoto
Kyoto udon is soft and gentle: a pale, fragrant dashi, shredded fried tofu, and thickened broths that hold the heat in winter.
Soupmap lists 79 udon places in Kyoto. Most are in Higashiyama and Sakyo.
Kyoto's udon belongs to the Kansai tradition: soft noodles in a light-coloured broth built on kombu and bonito, seasoned with light soy (usukuchi) so the dashi comes first. The city adds its own dishes. Kizami udon is topped with fried tofu cut into thin strips, rather than the sweet whole pocket of Osaka's kitsune. Ankake udon comes in a broth thickened with kudzu or potato starch, which keeps it hot, often with grated ginger. In Kyoto, ordering tanuki usually gets you that thickened broth with shredded fried tofu, quite different from Tokyo's tanuki with tempura scraps. Keiran udon, a thickened broth with beaten egg and ginger, is another local comfort.
