Udon in Nagoya
Nagoya's udon is miso nikomi: firm noodles simmered in a clay pot of dark red miso, plus kishimen and the city's curry udon.

Nagoya and the surrounding Aichi region make a dark, rich red miso from soybeans, and the city's signature noodle dish is built on it. Miso nikomi udon is cooked to order in an earthenware pot: thick, very firm noodles simmered in a dashi broth seasoned with that red miso, often with chicken, fish cake, green onion and a raw egg cracked in at the end. The noodles are traditionally made without salt, so they stay firm through the simmering and taste almost undercooked to first-timers. That's intended. The pot's lid doubles as a small plate for cooling each mouthful, and many people order rice to finish the broth.
The city has decades-old miso nikomi houses as well as everyday udon shops, and two other local noodles: kishimen, flat ribbon noodles in soy dashi, and a thick, spicy curry udon popular across the city.
