Ramen in Nagoya
Nagoya ramen means Taiwan ramen, a fiery bowl of minced pork and chilli invented here, plus Nagoya's own chains and side dishes.

Nagoya has a strong local food culture (locals call it Nagoya meshi), and its ramen follows suit. The city's own invention is Taiwan ramen: a small bowl of soy broth topped with minced pork stir-fried with a lot of chilli and garlic, plus garlic chives. Despite the name, it's from Nagoya. It's usually credited to the restaurant Misen, run by a Taiwanese-born family, which created it in the 1970s from a Taiwanese noodle dish, made much hotter for local tastes. Its spin-off, Taiwan mazesoba, a brothless bowl of thick noodles with the same spicy pork, raw egg yolk and garlic, also began in Nagoya, in the late 2000s.
Nagoya is also home to Sugakiya, a postwar chain known for a light pork-and-seafood ramen and a spoon with fork tines.
