Udon in Fukuoka
Fukuoka's other noodle is udon: soft Hakata-style noodles with burdock tempura, in the city that claims to be where noodles first arrived in Japan.
Soupmap lists 192 udon places in Fukuoka. Most are in Hakata and Chuo.
Fukuoka is famous for ramen, but locals eat a great deal of udon, and the local style is the opposite of Kagawa's firm Sanuki noodles. Hakata udon is soft and gentle, served in a light, clear dashi of kelp, bonito and small dried fish. The classic topping is gobo-ten, thin strips of burdock fried in tempura batter, which soften into the broth; maru-ten, a round fried fish cake, is another favourite. Many shops are fast, cheap and open early.
The city also claims a place in noodle history. At Jotenji temple in Hakata, a stone marks it as the birthplace of udon and soba in Japan, honouring the monk Enni (Shoichi Kokushi), who is said to have brought noodle-making techniques from Song-dynasty China in the 13th century. Historians debate the details, but the monument is a popular stop. Udon shops cluster around Hakata Station and Tenjin. About this guide
Built from Soupmap's catalog: our own selections plus open-data listings from Overture Maps and OpenStreetMap contributors. Open-data listings are reported locations, not independently checked; menus, prices, hours and current trading status are not verified. Styles come from shop names, so a place can serve more than its name says, or less.
Places are grouped by the municipality in their record. English municipality names come from official kana readings (localgovjp, CC0). Generated romanizations of shop names are approximate; the Japanese name is kept on every card. Sources and credits.
