Ramen in Fukuoka
Fukuoka is Japan's tonkotsu capital: milky pork-bone broth, very thin noodles, refills by the portion, and ramen stalls on the riverbank at night.

Fukuoka is where most of Japan's tonkotsu ramen comes from, or at least where it's most at home. The local bowl is Hakata ramen: pork bones boiled hard for hours until the broth turns milky and rich, very thin straight noodles, and simple toppings of chashu, green onion and wood-ear mushroom. Because the thin noodles go soft quickly, portions are small, and you order a refill of noodles, kaedama, rather than a bigger bowl. Shops ask how firm you want them, from soft to barely cooked.
The city is also known for yatai, open-air food stalls that set up in the evening along the Nakasu riverside, in Tenjin and in Nagahama, where ramen sits beside oden, skewers and drinks at a counter shared with strangers. Nagahama, by the fish market, gave its name to a closely related style. Most of the ramen in this guide is tonkotsu, but Fukuoka has other bowls too, including a strong tantanmen and chicken scene.
