Hakata ramen in Fukuoka
Hakata ramen in its home city: milky tonkotsu, very thin noodles cooked to your chosen firmness, and kaedama refills.

Hakata is the old merchant half of Fukuoka, and its name is on Japan's best-known tonkotsu style. The broth is made by boiling pork bones hard for many hours, which breaks the fat and collagen into a creamy, opaque soup. The noodles are very thin, low-water and straight, which is why they're cooked to order in seconds and why you choose their firmness. A Hakata bowl is modest in size; you finish the noodles while they're firm and order kaedama, a second portion of noodles dropped into the remaining broth.
The table is part of the bowl. Shops usually set out beni shoga (red pickled ginger), karashi takana (spicy pickled mustard greens), toasted sesame you grind yourself, and often a garlic press. Nagahama-style shops, named after the district by the fish market, are closely related and known for very quick, very cheap bowls.
