Ramen in Tsubame
Tsubame's ramen was built for factory workers: thick noodles, a niboshi soy broth and a heavy blanket of pork back fat.

Tsubame and its neighbour Sanjo, in central Niigata, are Japan's metalworking towns: Tsubame for Western cutlery, Sanjo for knives and tools. Their ramen grew up alongside the factories. The local style, often called Tsubame-Sanjo se-abura ramen, has a dark soy broth flavoured with niboshi (dried sardines), covered with a thick layer of chopped pork back fat (se-abura), with very thick noodles and chopped raw onion on top. The usual story is that it was made for workers who ordered delivery: the fat kept the soup hot on the way and the thick noodles didn't go soft before they arrived.
It is a heavy bowl, and shops often let you choose how much back fat you want, from a little to a lot. The style has spread beyond Niigata, but the concentration of shops here is what makes Tsubame a pilgrimage for fans. Tsubame-Sanjo Station on the Joetsu Shinkansen sits between the two towns.
