Ramen in Niigata
Niigata Prefecture claims five ramen styles, and its capital serves two: light, clear shoyu and a rich miso you can thin to taste.

Few prefectures have as many named ramen styles as Niigata, where local tourism promotes five: Niigata's light shoyu (assari), Niigata's rich miso, Tsubame-Sanjo's back-fat bowl, Nagaoka's ginger shoyu and Sanjo's spicy miso. The city of Niigata itself is home to the first two. Assari shoyu is the old-style everyday bowl: a clear soy broth with dried-fish depth and thin noodles. Rich miso (noko miso) is the opposite, a thick, heavily seasoned soup with thick noodles, and some shops serve it with a jug of plain broth, warisu, so you can dilute it as you eat.
The city's ramen counters cluster around Niigata Station and the old Furumachi district, and the port's seafood shows up in the stocks. If you're travelling around the prefecture, it's easy to taste several styles in a day by train.
