Ramen in Nagaoka
Nagaoka's bowl is shoyu with a bite of ginger: a dark soy broth sharpened with grated ginger, one of Niigata's five named ramen styles.

Nagaoka, Niigata's second city, is known for shoga-joyu ramen: soy-sauce ramen with ginger worked into the broth. The ginger isn't a garnish; it's simmered in or added to the soup, so every mouthful has a clean, warming heat that cuts the richness of the pork and chicken stock. The broth is dark, the noodles medium-thin, and the toppings old-fashioned: chashu, menma, spinach or greens, a sheet of nori. The style is usually traced to postwar shops that wanted a bowl to warm workers through the heavy snow this part of Japan gets.
Shoga-joyu is one of the five ramen styles Niigata Prefecture promotes, alongside Niigata city's light shoyu and rich miso, Tsubame-Sanjo's back-fat bowl and Sanjo's spicy miso. Nagaoka is a stop on the Joetsu Shinkansen, so it's easy to combine with a ramen trip around the prefecture; the city is also known for its summer fireworks festival.
