Ramen in Sapporo
Sapporo made miso ramen famous: thick curly noodles in a wok-seared broth, kept hot under a film of lard through the Hokkaido winter.
Soupmap lists 467 ramen places in Sapporo, Hokkaido. Most are in Chuo and Higashi.
Ramen arrived in Sapporo with the rest of Japan's postwar noodle boom, but the city gave the country something new in the 1950s: broth seasoned with miso. That bowl became what the rest of Japan calls Sapporo ramen, and it still sets the tone here. Minced pork, bean sprouts, cabbage and onion are seared in a very hot wok, the stock goes into the same wok to pick up the browned flavour, and only then does it meet the noodles. Those noodles are thick, curly and yellow, made to stand up to a heavy soup, and a layer of lard on top holds the heat in a cold room.
Miso is the signature, not the only option: most shops also serve shio and shoyu, and many offer butter and sweetcorn as add-ons. Bowls cluster around Susukino, the entertainment district south of Odori Park, where ramen counters stay open late, and around Sapporo Station. Read the story of the style in Sapporo miso: the bowl built for snow, or make it at home.

About this guide
Built from Soupmap's catalog: our own selections plus open-data listings from Overture Maps and OpenStreetMap contributors. Open-data listings are reported locations, not independently checked; menus, prices, hours and current trading status are not verified. Styles come from shop names, so a place can serve more than its name says, or less.
Places are grouped by the municipality in their record. English municipality names come from official kana readings (localgovjp, CC0). Generated romanizations of shop names are approximate; the Japanese name is kept on every card. Sources and credits.
