Miso ramen in Sapporo
The miso bowl Sapporo gave Japan: vegetables and pork seared in a wok, a garlicky miso broth, and noodles thick enough to carry it.

Miso ramen is a young style by ramen standards. It is usually traced to Sapporo in the mid-1950s, with the shop Aji no Sanpei most often credited, and it spread across Japan in the 1960s as Sapporo ramen. What sets it apart isn't only the miso, the fermented soybean paste that seasons the broth. It's the wok: minced pork and vegetables hit very hot lard and sear before the stock is poured in, so the soup tastes of the pan as much as the pot.
Shops blend their own miso, often mixing darker, saltier red miso with milder white, and finish with garlic and ginger. Noodles are thick, curly and springy. Sweetcorn and a pat of butter are the classic add-ons, more popular with visitors than with every local.
