Oden in Kanazawa
Kanazawa eats oden all year, with local pieces like crab in its shell in winter, wheel-shaped wheat gluten and sea snails.

In most of Japan oden is a winter dish; in Kanazawa, on the Sea of Japan coast, many oden shops serve it all year, and the city is proud of its version. The broth is a light, clear dashi, often based on kombu and bonito, and the pot carries local ingredients alongside the usual daikon, eggs and fish cakes. Kuruma-fu, big wheel-shaped rings of wheat gluten, soak up the broth. Bai-gai, whelk-like sea snails, are served in their shells. And in the snow-crab season, roughly from November to the end of the year, many shops offer kani-men: the meat, roe and eggs of a female snow crab packed back into its shell and warmed in the pot.
Oden shops cluster around the Omicho market and in the Katamachi and Kourinbo nightlife districts, and some old counters draw queues before they open, especially in crab season. Kanazawa's oden fits well with its other attractions, the Kenroku-en garden and the old teahouse districts.
