Soba in Nagano
Nagano is Shinshu soba country: buckwheat from cool mountain fields, and Togakushi soba served in small bundles on a bamboo basket.
Soupmap lists 15 soba places in Nagano.
The old province of Shinshu, today's Nagano Prefecture, is Japan's most famous soba region. Buckwheat grows well in its cool, high fields and thin soil, and Shinshu soba is a name you'll see on noodle packets across the country. In Nagano city, the streets leading up to Zenko-ji, one of Japan's most visited temples, are lined with soba shops serving pilgrims as they have for centuries.
Up in the mountains north-west of the city, Togakushi, a place of old shrines and cedar forests, has its own style: Togakushi soba is served in several small, coiled bundles (bocchi-mori) on a round bamboo basket, usually cold, and it often appears on lists of Japan's three great soba with Morioka's wanko soba and Izumo soba. Autumn brings shin-soba, the new harvest, when the noodles are at their most fragrant. Read Soba: a beginner's guide to buckwheat noodles, see Soba in Matsumoto for Shinshu's other soba town, or make a hot bowl at home with our kake soba recipe.

About this guide
Built from Soupmap's catalog: our own selections plus open-data listings from Overture Maps and OpenStreetMap contributors. Open-data listings are reported locations, not independently checked; menus, prices, hours and current trading status are not verified. Styles come from shop names, so a place can serve more than its name says, or less.
Places are grouped by the municipality in their record. English municipality names come from official kana readings (localgovjp, CC0). Generated romanizations of shop names are approximate; the Japanese name is kept on every card. Sources and credits.
