Soba in Matsumoto
Matsumoto is a Shinshu soba town in the shadow of the Alps, with buckwheat from the surrounding highlands and an old black castle.

Matsumoto, in central Nagano Prefecture, sits on a high plain ringed by the Japan Alps, and like much of Shinshu it's a soba town. Buckwheat thrives in the region's cool climate and big day-night temperature swings, and the city's soba shops serve noodles made from local flour, most often cold on a bamboo tray with a dipping sauce, so the buckwheat's flavour comes through. Many shops make their noodles by hand on the premises, and some offer juwari, 100% buckwheat, alongside the more common blend with a little wheat.
The shops cluster near Matsumoto Castle, one of Japan's few surviving original castle keeps and a National Treasure, and along the old merchant street of Nakamachi with its white storehouses. Autumn is the season for new soba, and the city celebrates the harvest with soba events.
