Sanuki udon in Takamatsu
How to eat Sanuki udon in its home city: kake, bukkake, kamaage and kamatama, and the self-service counter where you serve yourself.
Soupmap lists 26 places in Takamatsu, Kagawa whose names point to Sanuki udon.
Sanuki udon's character is in the bite: thick, square-cut noodles with koshi, a firmness and spring that Kagawa cooks get from long kneading and resting. Most shops offer the same handful of ways to eat them. Kake is noodles in hot, light dashi made with small dried sardines (iriko). Bukkake comes with a smaller amount of stronger sauce poured over. Kamaage is served straight from the cooking pot in its hot water, with a dipping sauce. Kamatama tosses hot noodles with a raw egg and a splash of soy, Sanuki's answer to carbonara. Zaru is chilled noodles on a bamboo tray with a dipping sauce.
At a self-service (serufu) shop the routine goes like this. Order the size and style at the counter and take your noodles. Warm them yourself in a basket (tebo) dipped in the boiling water if you want them hot, then add broth from the tap or urn. Help yourself to tempura, green onion and ginger, and pay at the end. About this guide
Built from Soupmap's catalog: our own selections plus open-data listings from Overture Maps and OpenStreetMap contributors. Open-data listings are reported locations, not independently checked; menus, prices, hours and current trading status are not verified. Styles come from shop names, so a place can serve more than its name says, or less.
Places are grouped by the municipality in their record. English municipality names come from official kana readings (localgovjp, CC0). Generated romanizations of shop names are approximate; the Japanese name is kept on every card. Sources and credits.
