Ramen in Yokohama
Japan's first great port city is also a ramen capital: home of iekei, of sanmamen, and of a museum built for ramen.

Yokohama opened to foreign trade in 1859, and its Chinatown is one of the places where Chinese noodle soups first took root in Japan. The city has kept making ramen history since. In 1974 the shop Yoshimuraya opened here and created iekei, a rich pork-bone and soy bowl with thick noodles, spinach and nori, now copied nationwide by shops whose names end in -ya. Yokohama's own older local dish is sanmamen: soy-based ramen topped with a thick, glossy stir-fry of bean sprouts, greens and pork, born in Chinatown kitchens.
In 1994 the city also gave ramen a museum: the Shin-Yokohama Ramen Museum, an underground street scene modelled on Tokyo around 1958, with a rotating line-up of shops from across Japan serving small bowls so you can try several. Beyond those landmarks, Yokohama is simply a very large city with a lot of everyday ramen, from Kannai and Chinatown to the suburbs.
