Iekei ramen in Yokohama
Iekei began in Yokohama in 1974: a pork-bone and soy broth with chicken oil, thick noodles, spinach and three sheets of nori.
Soupmap lists 32 places in Yokohama, Kanagawa whose names point to Iekei ramen. Most are in Kanagawa and Naka.
Iekei (家系, house lineage) takes its name from Yoshimuraya, the shop that opened in Yokohama in 1974, and from the many shops trained in or inspired by it, whose names typically end in -ya (家, house). The bowl is a blend of Kyushu and Tokyo ideas: a rich tonkotsu (pork-bone) broth seasoned with shoyu, glossy with chicken oil, over thick, straight, chewy noodles. Toppings are fixed and recognisable: spinach, a few large sheets of nori, and chashu, often smoky.
Part of the ritual is customisation. Shops typically let you choose noodle firmness (katasa), broth strength (aji no koi-sa) and the amount of oil (abura), and many keep garlic, ginger, doubanjiang and pickles on the counter. Regulars wrap rice in the soaked nori, so a bowl of rice is a common side order. Iekei is now found across Japan, but Yokohama still has the deepest concentration, and the lineage matters to fans. About this guide
Built from Soupmap's catalog: our own selections plus open-data listings from Overture Maps and OpenStreetMap contributors. Open-data listings are reported locations, not independently checked; menus, prices, hours and current trading status are not verified. Styles come from shop names, so a place can serve more than its name says, or less.
Places are grouped by the municipality in their record. English municipality names come from official kana readings (localgovjp, CC0). Generated romanizations of shop names are approximate; the Japanese name is kept on every card. Sources and credits.
