Ramen in Takayama
Takayama's chuka soba is a clear soy bowl with thin curly noodles, in a mountain town where the seasoning goes into the pot, not the bowl.

Takayama, the old castle town in the Hida mountains of Gifu, is known for its preserved merchant streets and morning markets, and for a ramen locals still call chuka soba. The bowl is light and clear: a soy-seasoned broth, usually from chicken and pork with dried fish or vegetables, and thin, curly noodles. What distinguishes the traditional style is how it's seasoned. Rather than putting a spoonful of tare in each bowl and adding stock, many Takayama shops simmer the soy seasoning together with the stock in one pot, so the whole batch tastes the same and the soy flavour is mellow.
The style is often called Hida-Takayama ramen outside the region. Bowls are modest in size and simple in toppings: chashu, menma, green onion. Ramen shops are spread through the old town and near the station, and a small bowl makes an easy lunch between temples and sake breweries.
