Ramen in Toyama
Toyama Black is as dark as its name: a strongly salty soy broth, coarse black pepper, and a bowl of rice to eat it with.

Toyama's best-known ramen looks almost black. The broth is seasoned with a very dark, salty soy sauce, the surface is dusted with lots of coarse black pepper, and the toppings are simple: thick slices of chashu, menma and green onion. The usual story is that a postwar shop in the city made it for manual workers who needed salt and energy and ate it with plain rice, the way you'd eat a heavily seasoned side dish. That's still the advice: order rice, and stir the noodles so the seasoning settles evenly before you taste.
Toyama Black became known nationally from the 2000s, and versions now appear in convenience-store cups and instant packets. The city, on the Sea of Japan coast with the Tateyama mountains behind it, is also known for seafood such as white shrimp (shiro-ebi), and many ramen shops serve lighter bowls too.
