Ramen in Okayama
Okayama's ramen is mostly pork-and-soy chuka soba, with a distinctive chicken-based neighbour, Kasaoka ramen, a short train ride west.

Okayama doesn't have a ramen style as famous as Hakata's or Sapporo's, but it has a strong everyday tradition. The common bowl in the city is chuka soba with a tonkotsu-shoyu broth, pork bones seasoned with soy, light brown and savoury, with medium-thin noodles, bean sprouts and chashu. Many of the long-running shops have served it since the postwar decades, and the city's ramen leans hearty rather than delicate.
Nearby Kasaoka, on the coast to the west, has its own style that ramen fans seek out: a soy broth from chicken (often from older hens), topped with slices of simmered chicken in place of pork chashu, and green onion cut on the diagonal. Okayama city itself has bowls of every kind, clustered around Okayama Station and the downtown shopping streets towards Korakuen garden and Okayama Castle. The city is also a crossroads for trips to Kurashiki and the Seto Inland Sea islands.
