Ramen in Hiroshima
Hiroshima's ramen is pork-and-soy chuka soba, and the city's own invention: Hiroshima tsukemen, cold noodles with a fiery chilli dip.

Hiroshima is better known for okonomiyaki, but it has a strong ramen culture with two local styles. The everyday bowl, usually just called chuka soba, is tonkotsu-shoyu: a pork-bone broth seasoned with soy, light brown and milder than Kyushu's, with thin straight noodles, bean sprouts, green onion and chashu. It grew from postwar street stalls and is still sold at long-running shops around the city centre.
The second is Hiroshima tsukemen, which is quite different from Tokyo's thick, warm dipping broths. Here the noodles are chilled and served with sliced cabbage, cucumber and green onion, and the dip is a cold, sharp sauce of soy and vinegar loaded with chilli and sesame. You choose how hot, usually by number. It's a summer favourite but eaten all year. Shops cluster in Nagarekawa and Hatchobori downtown and around Hiroshima Station.
