Ramen in Kumamoto
Kumamoto ramen is tonkotsu with a toasted-garlic heart: chips of fried garlic and black garlic oil over a pork-and-chicken broth.

Kumamoto's ramen descends from Kurume's tonkotsu, but the city made it its own. The broth is pork bone, often blended with chicken for a rounder, milder taste than Hakata's. The noodles are medium-thick and straight, firmer than Hakata's thin ones. And the signature is garlic: crisp chips of fried garlic scattered on top, and mayu, a black oil made by slowly frying garlic until it's dark, drizzled over the bowl for a bitter, smoky edge.
Kumamoto ramen shops opened from the 1950s, and some of the old names have become national and even international chains. In the city, bowls cluster in the Shimotori and Kamitori arcades in the centre and around Kumamoto Station. Kumamoto Castle, whose main keep reopened in 2021 after the 2016 earthquakes, is a short walk from the arcades, which makes ramen an easy lunch.
