Ramen in Hakodate
Hakodate keeps the lightest of Hokkaido's three great bowls: shio ramen, a clear salt-seasoned broth with straight noodles.

Hokkaido has three regional ramen styles, one for each of its best-known cities: miso in Sapporo, shoyu in Asahikawa and shio in Hakodate. Hakodate's bowl is the delicate one. The broth is clear, usually pork or chicken bone simmered gently, often with kombu, and seasoned with salt rather than soy or miso, so you can see the straight noodles through it. Toppings are kept simple: chashu, menma, green onion, sometimes wheat gluten or a few greens.
The city was one of the first Japanese ports opened to foreign trade in 1859, and its ramen is often linked to the Chinese cooks who settled there. Today ramen counters are spread between Hakodate Station, the morning market beside it, and the old brick warehouse district by the harbour.
