Udon in Ise
Ise udon is the softest udon in Japan: thick, pillowy noodles in a small pool of dark, sweet tamari sauce, served fast to pilgrims.
Soupmap lists 12 udon places in Ise, Mie.
Ise, home to Ise Jingu, the most important shrine in Shinto, has fed pilgrims for centuries, and its udon is built for them. Ise udon noodles are very thick and boiled for a long time until they're soft and pillowy, almost the opposite of Kagawa's firm Sanuki udon. Instead of a broth, they come with a small amount of dark, glossy sauce made from tamari-style soy, mirin and dashi, topped with chopped green onion; you mix the noodles through the sauce before eating. Because the noodles are kept ready, a bowl arrives almost as soon as you order, which suited travellers on a long walk.
You'll find it in shops along the old approach streets near the Inner Shrine (Naiku), including the restored Edo-style Okage Yokocho, and near Ise-shi and Uji-Yamada stations. The style is often mentioned with Hakata udon as Japan's softest. Read Japan's three great udon, and the fight for third place, or make a Kansai-style bowl at home with our kitsune udon recipe.

About this guide
Built from Soupmap's catalog: our own selections plus open-data listings from Overture Maps and OpenStreetMap contributors. Open-data listings are reported locations, not independently checked; menus, prices, hours and current trading status are not verified. Styles come from shop names, so a place can serve more than its name says, or less.
Places are grouped by the municipality in their record. English municipality names come from official kana readings (localgovjp, CC0). Generated romanizations of shop names are approximate; the Japanese name is kept on every card. Sources and credits.
