Soba in Fukui
Fukui's soba is Echizen oroshi soba: cold buckwheat noodles with sharp grated daikon, bonito flakes and sauce poured over.

Fukui, on the Sea of Japan coast, is the home of Echizen soba, named after the old province. Its signature is oroshi soba: cold soba topped with daikon radish grated with its juice, plus bonito flakes and green onion, with the sauce poured over the noodles or mixed with the grated daikon rather than served on the side for dipping. Fukui's daikon tends to be pungent, so the result is sharp, cool and clean, a contrast to the rich dipping sauces of Tokyo. Hot versions exist too, and many shops serve oroshi soba all year.
The noodles are usually darker and more rustic than Tokyo's, often made from local buckwheat with the hull partly ground in. Soba shops are spread around Fukui Station and through the prefecture, from Echizen to the Eiheiji temple area. Fukui is also known for its sauce katsudon, crumbed pork cutlet dipped in a Worcester-style sauce over rice, which many soba shops also serve.
