Ramen in Tokushima
Tokushima ramen comes in brown, yellow and white, with sweet simmered pork belly and, very often, a raw egg cracked on top.

Tokushima, on Shikoku, is known for one of Japan's most distinctive regional bowls. The broth comes in three colours. The brown style, the one the city is best known for, is a dark tonkotsu-shoyu seasoned richly with soy. The yellow style is a lighter pork-and-chicken soy broth, and the white style is a paler tonkotsu. Instead of chashu slices, the classic topping is bara niku: thin strips of pork belly simmered sweet and savoury in soy and sugar. Many shops will add a raw egg, which you break into the hot broth, and the bowl is traditionally eaten with rice, almost as a side dish.
Tokushima ramen became nationally famous from the late 1990s and is now sold in instant versions, but the shops in the city are the real thing; they cluster around Tokushima Station and the downtown streets near the Shinmachi river.
