Ramen in Sendai
Sendai is a city of everyday ramen, and its best-known claim is a summer one: hiyashi chuka, chilled noodles, is often said to have started here.

Sendai, the largest city in Tohoku, doesn't have one signature bowl the way Sapporo or Hakata does. Its ramen scene is broad: shoyu and miso shops, rich tonkotsu-shoyu, tsukemen and plenty of old-style chuka soba. Many of the counters gather around Sendai Station and in Kokubuncho, the city's nightlife district a short walk west.
What Sendai claims is hiyashi chuka: cold ramen noodles under strips of ham, egg and cucumber with a sweet-sour soy dressing, a summer dish across Japan. The restaurant Ryutei-ro in Sendai is often credited with serving an early version in the 1930s, though, like many food origin stories, it has rivals. If you visit in the warm months, look for a hiyashi chuka sign; in winter, look for a hot miso bowl. Sendai is also known for its gyutan (grilled beef tongue), which a few ramen shops borrow as a topping.
