Ramen in Sano
Sano ramen is known for its noodles: soft and wavy, rolled out with a thick green bamboo pole, in a clear soy broth.

Sano, in southern Tochigi, is one of the Kanto region's best-known ramen towns, and the reason is in the noodles. The traditional method is aodake-uchi: a thick pole of green bamboo is used to roll and press the dough, with the cook sometimes bracing a knee on it for leverage. The result is soft, very wavy noodles with a lot of water in them, more delicate than most ramen noodles. The broth is a clear soy, typically chicken- or pork-based, light enough not to swamp the noodles.
Many shops in the city still make their noodles in-house, and ramen has become part of Sano's identity, alongside the Sano Yakuyoke Daishi temple that draws visitors for protection from misfortune. The town is easy to reach by car or train from Tokyo for a day trip. Because the style leans on clean soy and soft noodles, it sits closer to Tokyo's old-style chuka soba than to the heavier bowls of Kyushu.
