Ramen in Kitakata
A small Fukushima town with an outsize ramen habit: clear soy broth, wide wavy noodles, and asa-ra, ramen for breakfast.
Soupmap lists 20 ramen places in Kitakata, Fukushima.
Kitakata, in the Aizu region of Fukushima, has a population of under fifty thousand and a very large number of ramen shops for its size, which is why it's counted among Japan's great ramen towns alongside Sapporo and Hakata. The local bowl is clear and gentle: a soy-seasoned broth from pork bones and dried sardines (niboshi), with wide, flat, wavy noodles called hirauchi chijiremen that hold a lot of soup. Toppings are classic: slices of chashu, menma, green onion.
The habit visitors remember is asa-ra, short for asa ramen, morning ramen. Some shops open early in the morning, a custom often traced to factory and farm workers coming off night shifts. Kitakata is also a town of kura, traditional storehouses with thick plastered walls, and a walk between them fills the gap between breakfast and a second bowl. Read Kitakata: the town that eats ramen for breakfast, and see the Kitakata ramen style guide for shops elsewhere that carry the name.

About this guide
Built from Soupmap's catalog: our own selections plus open-data listings from Overture Maps and OpenStreetMap contributors. Open-data listings are reported locations, not independently checked; menus, prices, hours and current trading status are not verified. Styles come from shop names, so a place can serve more than its name says, or less.
Places are grouped by the municipality in their record. English municipality names come from official kana readings (localgovjp, CC0). Generated romanizations of shop names are approximate; the Japanese name is kept on every card. Sources and credits.
